Invented in Algeria by the French distiller Gaétan Picon, Picon is a form of bitters, typically served with beer. With a strong orange-flavored base, the beverage also contains gentian, quinquina, and caramel. Here, a geometrically-rendered waiter rushes down the stairs, spritzing soda water into a fresh apéritif glass of Picon.
